Caramelized onion and blue cheese tart

Aliança Vinho Verde 2018, Portugal

Vinho Verde (VEE-nyoh VEHR-deh) is made with the Azal, Pedernã, Trajadura and Loureiro grapes and is light, crisp, and acidic, with lots of floral and green fruit aromas and a slight, tongue-tickling effervescence; the perfect summer refresher. Saúde!

 

Shrimp vegetable tagine with preserve lemon

Chateau de Campuget Rosé 2018, Costieres de Nimes, France

Delicate in both aroma and flavor, this pale-pink rosé, a blend of 70% Syrah and 30% Grenache, offers perfumed cherry blossom and crisp red cherry and raspberry notes. While dry and full in body, it’s refreshingly mineral, brightened by juicy, lemony acidity. Santé!

 

Half Cornish hen, creamy pecorino risotto

Massimo Rivetti Nebbiolo 2017, Langhe, Italy

Medium to deep red color with a purple tint, the bouquet is of dried herbs and flowers. The wine is full-bodied with firm tannins. The classic savoriness of nebbiolo with a depth of raspberry and red cherry fruit. Lovely wine! Cin Cin!

 

Spice-rubbed pork tenderloin, roasted vegetables, pomegranate glaze

Château la Tour de By 2016, Médoc, France

91 points, Wine Enthusiast.  Roger Voss, of Wine Enthusiast, asks “Is 2016 the perfect Bordeaux?” This Medoc blend of 65% Cabernet Sauvignon, 30% Merlot and 5% Petit Verdot is rich while also stylish, full of tannins as well as freshness. Cheers!
